I’m really excited about this week’s menu! Most recipes have the Weight Watcher’s PointsPlus values with them (unless it’s pretty much straight meat–you are on your own for that!) and I’ve tried some really yummy things this week! So, here is the list of meals on this menu:
1. I don’t feed my family steak every week, but my son turned 18 (holy cow!) this week and that was his birthday request for dinner.
2. I wanted to post this menu by Monday night, but I haven’t actually tried the Crock Pot Santa Fe Chicken recipe. I will try it (probably tomorrow) and post the results. If it needs any doctoring, I’ll let you know that too!
3. The Zatarain’s Chicken is not really a recipe, but a meal idea–and I loved it!
To give credit where credit is due, the Hominy Taco Chili and the Grilled Sirloin steak recipes are from Taste of Home Magazines. I cut the recipes out years ago and have been enjoying them ever since! The steak marinade is pretty much the only one I ever use because it is just so yummy and I use it on almost every steak I cook! You should have seen my brother-in-law grilling in the dark now that it gets dark so early!
I discovered the blog Mel’s Kitchen Cafe (thanks Julie and Heidi!) yesterday and am loving some of the recipes! I was completely intrigued by the flavor combination in the Stir-fry Basil Chicken, but not completely convinced. I made it tonight (with the changes noted) and it was AMAZING! Everyone really enjoyed it! Be a little daring and try it out! Then comment and let me know how you like it!
